The “Dirty Lobster” is a bold, rustic, and luxurious BBQ dish where the lobster is grilled directly on the embers. The smoky aroma, brown butter, dried chilies, and grilled lemon combine into a rich and unforgettable flavor experience. Perfect for a seaside-style BBQ feast or a gourmet outdoor dinner.
Ingredients:
- 4 fresh whole lobsters (approx. 500–700 g each)
- ½ kg butter
- ½ l oil
- 1 garlic clove, halved
- a few dried chilies (e.g., ancho, guajillo, pasilla negro)
- 1 lemon, halved and grilled
- salt
- black pepper
Accessories:
- garlic bread
- green salad
- smoked lemon
- hot sauce
Instructions:
- Melt the butter until golden, add the oil, garlic, chilies, lemon, salt, and pepper. Keep warm.
- Humanely kill the lobsters with a sharp knife.
- Place them directly on the coals, shell side down first.
- Grill for 1–2 minutes, then flip and grill the other side for 1–2 minutes. Larger lobsters may need a bit more time.
- Transfer to the butter mixture and let soak for 10–20 minutes at about 45–50°C.
- Remove and serve immediately with your favorite sides.
- Don’t forget to dip your garlic bread in the spicy butter – it’s too good to waste!
